Steps

Let’s start preparing the marinated grilled pumpkin by dealing with the pumpkin itself; I recommend using a small one. I used a *Violina* pumpkin (a type of butternut squash), which is perfect because the top section is seedless.

Wash it and cut it in half. Use the seedless top section.

Remove the skin. Cut it in two and then into thin slices.

Place a lightly oiled grill pan on the stove (I wipe it with a paper towel dipped in a drop of oil).

Once it is nice and hot, grill the pumpkin slices.

It will take about 4–5 minutes per side.

Once cooked, season them with a pinch of salt.

Prepare the marinade

Sauté a clove of garlic in a little oil in a frying pan.

Tilt the pan to one side so the garlic infuses well into the oil.

Transfer the hot oil to a bowl and add the chopped herbs.
