fresh.

If you have a choice of several varieties, you can try them individually. Some plums stay firmer, while others release more juice. Consequently, the consistency in each jar may vary slightly.

Tips for even better plums

Use sweet fruit whenever possible.
Since no sugar is added to the jar, all the sweetness comes from the plums themselves; therefore, it is best to preserve them when they are nice, ripe, and naturally sweet.

Inspect them.
Carefully prepare the plums before placing them in the jars.

Check each plum individually. If you notice signs of rot or mold, it is better to discard that plum. It is recommended to use only high-quality fruit for preserves.

Do not overfill the jars.
Although plums can be packed tightly, you must leave the appropriate amount of headspace, following the guidelines for your specific jar type and pasteurization method. Proper headspace is crucial for achieving a tight seal.

Label the jars.
You can write the year of preparation and the fruit variety on each jar. If you are processing multiple varieties, it is also worth noting their names.
